Firriato Gaudensius Blanc de Noir – Etna DOC sparkling wine
Gaudensius Blanc de Noir is the Etna DOC Classic Method sparkling wine produced by Firriato, made with 100% Nerello Mascalese. The "blanc de noir" vinification begins with a soft pressing of the undestemmed bunches, in sandy loam soil at 650 meters above sea level in the volcanic area of Etna, to preserve the grape's freshness and minerality.
The result is a straw yellow color with golden highlights and a fine, persistent perlage. The nose reveals notes of Sicilian citrus, anise, brioche, and a pronounced minerality; the palate confirms a complex structure, elegance, and a long finish with currant and almond notes. Aged on the lees for 32 months, it has a 12% ABV. Serve at 6-8°C, ideal with aperitifs or fish dishes. Store in a cool, dark, and stable place, preferably upright.
